Salsa Verde Enchilada Skillet

What You Need

  • 1 lb. lean ground beef
  • 1 small onion, chopped
  • 1/2 tsp. cumin
  • 1 jar (16 oz.) salsa verde
  • 1 cup frozen corn
  • 6 flour tortillas (6 inch), cut into quarters, divided
  • 1/4 cup chopped fresh cilantro, divided
  • 1-1/2 cups KRAFT Signature Mexican Blend Shredded Cheese
  • 1 avocado, sliced
  • 1 jalapeno pepper, sliced

Let’s Make It

  1. Heat oven to 425°
  2. Cook and stir meat and onion in large oven-proof skillet on medium heat until meat is browned and onion is tender; drain. Return meat to skillet. Season with cumin.
  3. Stir in salsa verde, corn, 4 tortillas and 2 Tbsp. cilantro. Top with remaining tortillas and shredded cheese.
  4. Bake 15 to 20 min. or until the cheese is melted and golden brown.
  5. Top with avocado, jalapeno and remaining cilantro.
