What You Need
- 5 ripe plantains, peeled and sliced lengthwise
- 1 lb. lean ground beef
- 1 onion, chopped
- 1 red pepper, chopped
- 2 cloves garlic, minced
- 1/2 cup pimento-stuffed green olives
- 1/4 cup tomato sauce
- 1 Tbsp. capers
- 1 tsp. dried oregano
- 1/2 tsp. cumin
- 1/2 tsp. seasoning with coriander and annatto
- 1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese
- 3 eggs, beaten
Let’s Make It
- Heat oven to 375F.
- Place plantains on parchment-covered baking sheets; spray lightly with cooking spray. Bake 15 to 20 min., flipping halfway through until soft and lightly golden.
- Meanwhile, brown ground beef in large skillet. Add onion, red pepper and garlic; cook and stir 5 min. or until soft. Add olives, tomato sauce, capers, oregano, cumin and coriander seasoning.
- Arrange a layer of baked plantains onto bottom of 8 x 8-inch baking dish. Top with 1/2 meat mixture and 1 cup cheese. Top with remaining plantains, meat mixture and cheese. Pour eggs over top. Cover with foil.
- Bake 25 to 30 min., removing foil after 20 min. Let stand 10 min. before cutting to serve.
