Parmesan Rice Frittata

What You Need
- 2 cups cooked long-grain white rice
- 1/2 cup KRAFT Shredded Cheddar Cheese
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 2 eggs
- 1 Tbsp. oil
- 1/4 cup chopped red pepper
- 1/4 cup grape tomatoes, quartered
- 1 Tbsp. finely chopped fresh parsley
Let’s Make It
- Mix first 4 ingredients until blended.
- Heat oil in medium skillet on medium heat. Add rice mixture, pressing evenly to cover bottom of skillet. Cook 8 to 10 min. or until golden brown. Slide spatula underneath rice; tip skillet to loosen and gently slide onto plate. Invert skillet over rice on plate; using plate, flip over to cook other side. Cook 8 to 10 min. or until golden brown.
- Place on serving plate; top with peppers, tomatoes and parsley. Cut into wedges to serve.
