BBQ Bacon and Cheese Pancakes

What You Need
- 1 cup flour
- 1 Tbsp. baking powder
- 1 egg
- 1 cup milk
- 2 Tbsp. oil
- 6 slices cooked bacon, chopped
- 2 Tbsp. chopped fresh parsley
- 1-1/4 cups shredded KRAFT Shredded Colby & Monterey Jack Cheeses, divided
- 1/4 cup barbecue sauce
- 1/4 cup ketchup
Let’s Make It
- Combine flour and baking powder.
- Whisk egg, milk and oil in medium bowl until blended. Add flour mixture; stir just until blended. (Do not overmix; batter can be slightly lumpy.) Stir in bacon, parsley and 1 cup cheese.
- Ladle batter onto hot griddle or into hot skillet sprayed with cooking spray, using 1/2 cup batter for each pancake; cook until bubbles form on tops, then turn to brown other sides. Transfer pancakes from each batch to baking sheet; place in warm oven to keep warm while cooking remaining pancakes.
- Top pancakes with remaining cheese. Mix barbecue sauce and ketchup until blended; drizzle over pancakes.
