Butternut Squash Mac and Cheese

What You Need

  • 1 lb. elbow macaroni, uncooked
  • 2 cups peeled butternut squash cubes (1/2 inch)
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1-1/2 cups milk
  • 1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese
  • 1/2 cup KRAFT Shredded Parmesan Cheese

Let’s Make It

  1. Cook macaroni in medium saucepan as directed on package, omitting salt. Meanwhile, cook squash in large saucepan of boiling water 8 min. or until tender.
  2. Drain squash, reserving 2 Tbsp. of the cooking water. Add reserved water and squash to blender; blend until smooth.
  3. Melt butter in large saucepan on low heat. Add flour and seasonings; cook and stir 2 min. or until hot and bubbly. Gradually whisk in milk; bring just to boil on medium heat, stirring constantly. Simmer on medium-low heat 3 to 5 min. or until thickened, stirring constantly. Gradually add cheddar, cooking and stirring after each addition until melted. Remove from heat. Add squash purée; mix well.
  4. Drain macaroni. Add to squash mixture; mix lightly. Sprinkle with Parmesan.

Microwave on HIGH for 3 min. or until heated through, stirring after 1-1/2 min.
