Pumpkin Parmesan Pancakes

What You Need

  • 1/4 cup butter
  • 2 cups flour
  • 1/4 cup KRAFT Grated Parmesan Cheese
  • 1 Tbsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1-1/2 cups whole milk
  • 1 cup pumpkin
  • 1/3 cup firmly packed brown sugar
  • 2 eggs
  • 2 tsp. vanilla

Let’s Make It

  1. Cook butter in small saucepan on medium heat 5 to 8 min. or until butter is lightly browned, stirring constantly. Remove from heat, transfer to small bowl to cool.
  2. Mix flour, Parmesan, pumpkin pie spice, baking powder, baking soda and salt in large bowl until blended. Reserve.
  3. Mix milk, pumpkin, brown sugar, eggs and vanilla in medium bowl. Slowly whisk in cooled brown butter. Add to reserved dry ingredients. Stir until just combined.
  4. Heat large nonstick skillet sprayed with cooking spray on medium heat. Ladle batter into hot skillet, using 1/4 cup batter for each pancake. Cook until bubbles form on tops, then turn to brown other sides.
