Prep Time: 30 min(s)
Servings: 6
What You Need
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 2 cans (14.5 oz. each) no-salt-added stewed tomatoes, undrained
- 1 can (14.5 oz.) fat-free reduced-sodium chicken broth
- 1 cup whole milk Greek plain yogurt
- 1 can (6 oz.) tomato paste
- 6 slices white bread
- 6 sticks KRAFT String Cheese
- 2 Tbsp. butter, melted
Let’s Make It
- Heat oil in medium saucepan on medium heat. Add garlic; cook and stir 1 min. Stir in tomatoes and broth; bring to boil.
- Blend, in batches if necessary, in blender until smooth. Return to pan. Whisk yogurt, tomato paste and seasoning until blended. Add to tomato mixture; mix well. Cook on medium-low heat 10 min. or until heated through, stirring frequently.
- Meanwhile, use a rolling pin to flatten each bread slice to 5x3x1/2-inch rectangle. Cut off and discard crusts.
- Top each bread slice with string cheese; roll up tightly.
- Melt butter in small skillet on medium heat. Add roll-ups, seam-sides down; cook 3 to 5 min. or until cheese is melted and roll-ups are evenly browned, turning occasionally.
- Serve with individual bowls of soup.
